How to make
Pour the flour into a bowl and add the salt, sugar and vanilla. Then pour the coconut oil inside. Begin to knead with your hands and press the mixture with your palms.
Crumbs will be obtained at first. Then start kneading, until a butter pastry dough is obtained. Divide the dough into two parts.
Add the sliced dark chocolate to one part and knead. Wrap it in cling film and store it in the refrigerator.
Add the dried blueberries to the other part of the dough and knead again, wrap it in foil and store it in the refrigerator.
After 1 hour, take both types of dough out of the fridge and tear a little from them and form balls first and then flatten them like biscuits.
Arrange them in a tray, which you have previously covered with baking paper.
Bake them at 360°F (180°C) for about 20 minutes, by being careful not to burn them.
The vegan biscuits with coconut oil are very tasty and aromatic while they're warm, but they are also great the next day.
