How to make
Crush or grate the garlic cloves on a fine grater. Mix them with finely chopped parsley, black pepper, a little salt and olive oil and spread the resulting mixture generously on the lamb ribs, which have been previously washed and dried.
Leave them at room temperature for 15 to 30 minutes.
Place the ribs in a clay baking pan and they don't have to be placed in one layer.
Pour the white wine and lard. Finally, sprinkle with breadcrumbs and make sure that they're all over the meat. Sprinkle a little more salt and place them in a non preheated oven.
Turn it on at 390°F (200°C) and roast them for about 35 minutes, or until the breadcrumbs on top aquire an appetizing color.
Serve them warm in company with a glass of red wine.
