How to cook
Put the ribs to boil for about 45 minutes in a pressure cooker, add black pepper peppercorns if desired, 1-2 cloves and bay leaf. Then drain them and strain the broth. Fry the onion, in a little bit add the chopped mushrooms and once softened, add the rice, stir, and top up with a cup of broth.
Allow the rice to increase in size slightly. Season with salt and ground black pepper. Distribute the ribs in an oven dish, add the rice and pour on the remaining broth. If necessary, season with more spices.
Put it in a moderately heated oven to bake for about 45 minutes or until fully cooked. You can prepare the dish with carrots instead of mushrooms, as well as add a few more of your favorite vegetables.
