How to cook
Boil and debone the chicken. In a pan with oil, first fry the chopped mushrooms, then the finely chopped tomatoes. Season with salt and pepper.
Put the rice to boil in some of the chicken broth. Brush the pan with a little oil. Make a bed of rice, sprinkle it with salt and pepper.
Arrange the chicken on the bed, along with the mushrooms and mix. Sprinkle it with grated cheese and mix gently once more. You can put a little oil in.
Prepare a sauce from the butter, flour, chicken broth, salt and pepper to taste, then pour it into the dish. Bake until you get a golden crust.
