Ingredients

  • butter - 5.3 oz (150 g)
  • eggs - 1 pc.
  • sugar - 1 cup
  • coconut shavings - 1 cup
  • flour - 1 and 1/2 cups
  • vanilla - 2 powders
  • baking powder - 1/2 tsp.
  • honey - 2 tbsp.
  • fresh blueberries - 1 cup

How to make

Put the softened butter and sugar into a bowl. Beat with a mixer, until a white mixture is obtained.

Add the egg and beat for about 5 minutes, until a fluffy cream is obtained. Add the coconut flakes, honey and vanilla.

Mix the flour with half a teaspoon of baking powder. Add the blueberries. Homogenize all of the products well.

Line a large tray with baking paper. With a small spoon, scoop out the mixture and pour the spoonfuls onto the tray.

Leave plenty of space between the cookies, because they expand a lot. Bake at 360°F (180°C) in a preheated oven with a fan, until they aquire a golden brown color.

Cool the baked blueberry, coconut and vanilla cookies onto a wire rack!
