How to make
The eggs are beaten along with the sweetener. Melt the butter and add it to the egg mixture along with the vanilla and mix again.
Add the coconut shavings and flour and stir with a spoon until they are completely absorbed into the mixture.
The resulting homogeneous mixture is covered with cling film and left in the refrigerator for 90 minutes.
The dough is then removed from the refrigerator and the cookies are formed by scooping half a teaspoon of the mixture and placing it onto a tray lined with baking paper, then pressing down lightly to make it flat.
Bake in a preheated oven at 360°F (180°C) with a fan for about 12-15 minutes, i.e. until the cookies acquire a light golden color around the edges.
This amount of mixture made over 40 cookies for me.
