How to make
In a bowl, mix the walnuts, flour, vanilla and stir.
In another perfectly dry bowl, mix the egg whites and sugar and beat with a mixer, until a white mixture - on low speed and then on high.
After about 5-6 minutes you will have a mixture with perfect density. Add the dry ingredients to it, little by little. Gently stir the homemade cookie mixture.
Shape the walnut cookies with a piping bag or by hand. Shape balls and flatten them slightly.
The walnut cookies from the olden days are baked for 15 minutes at 360°F (180°C).
