How to make
Beat the egg yolk, add the corn starch, a little cold water to form a runny cream.
Strain the cream and add boiling hot sweetened milk, and the coconut cubes. Bring to a boil while stirring constantly.
Set aside, add the vanilla and allow to cool.
Whisk the egg white to a stiff peaks, with a little sugar and add it to the cream.
Stir gently to a homogeneous mix.
Rince small cups, or glasses with cold water. Add a tsp of blackberry jam and pour the vanilla pudding on top.
You can garnish with a little jam on top if you wish.
Chill before serving.
