"A classy Vanilla and Coconut Pudding - your guests wont be able to resist"

Ingredients

  • milk - 13.5 fl oz (400 ml)
  • coconut - 4 tsp dried, in cubes
  • sugar - 1.8 oz (50 g)
  • blackberrie jam - 4 tsp.
  • eggs - 1 pc.
  • corn starch - 1.8 oz (50 g)
  • vanilla extract

How to make

Beat the egg yolk, add the corn starch, a little cold water to form a runny cream.

Strain the cream and add boiling hot sweetened milk, and the coconut cubes. Bring to a boil while stirring constantly.

Set aside, add the vanilla and allow to cool.

Whisk the egg white to a stiff peaks, with a little sugar and add it to the cream.

Stir gently to a homogeneous mix.

Rince small cups, or glasses with cold water. Add a tsp of blackberry jam and pour the vanilla pudding on top.

You can garnish with a little jam on top if you wish.

Chill before serving.
