Ingredients

  • For the cake layers
  • coconut shavings - 1 cup
  • corn starch - 1 cup
  • honey - 3 tbsp.
  • baking powder - 1 tbsp (10 g)
  • warm water - 1 cup
  • For the cream
  • soft avocado - 4 pcs.
  • blueberry jam - 5 tbsp.
  • For decoration
  • fresh blueberries - 1 handful

How to make

Mix all of the ingredients for the cake layers. Divide the mixture into two baking pans and bake, until they're fully baked. Leave them to cool down.

Peel the avocado and mash it along with the jam, until a smooth cream is obtained.

Place one cake layer in a wide plate and spread it with the cream.

Place the other cake layer on top, spread it with cream, smooth it out and decorate the fruit cake with blueberries.

The Vegan Blueberry and Coconut Cake is very tasty.
