How to make
Start with the dough for the cake layers - in a deep pot, beat the egg with the sugar.
Add the honey, milk, butter and baking soda.
Put the pot on a moderate heat and cook until the mixture acquires a nice caramel color.
Remove the pot from the heat and after it has cooled, add the flour and knead a soft and non-sticky dough.
Divide the dough into seven equal sized balls.
On baking paper, roll out a ball into a 2 mm thick crust, using a ring, cut the crust to form the cake layer.
Bake along with the cut outs for about 5 minutes in a preheated oven at 320°F (160°C). Do this with all seven balls and let the baked cake layers cool completely.
For the cream, in a bowl mix the sour cream and sugar, stir until the sugar is absorbed from the cream.
Place one of the completely cooled cake layers in a ring, cover with the cream and distribute 1 tbsp. of the blueberry jam on top of the cream. This is how you alternate cake layer, cream and jam, finishing off the French country-style cake with cream.
Coarsely grind the baked and cooled cut outs in a blender and sprinkle the French Country-Style Cake on top. Refrigerate the cake along with the ring for at least 12 hours.
Remove the ring and serve the incredibly delicious and beloved French Country-Style Cake, also known as Honey Cake.
