Ingredients

  • tomatoes - 11 lb (5 kg) ripe
  • chilli peppers - 10 pcs.
  • balsamic vinegar - 1/2 cup (100 ml)
  • sugar - 1.1 lb (500 g)
  • salt - 2.5 oz (70 g)
  • black pepper corns - 1 tsp.
  • cumin seeds - 1 tsp.
  • savory herb - 1 stalk
  • onions - 1 pc.
  • garlic - 1 head

How to make

This is a quick, easy recipe for homemade ketchup, that pairs with roasted meats and sandwiches.

Wash the tomatoes and grind them in a blender.

Wear a pair of silicone gloves before touching the chilli peppers. Remove the stems, cut lengthwise and discard the seeds. add them into the blender bowl.

Peel the onion and cut it in half. Wash the garlic and separate the cloves without peeling them.

Place the onion, garlic, peppers corns and cumin seeds into a bouquet garni.

Pour the tomatoes and pepper into a pot and add the bouquet garni and savory herb.

Bring to a boil and simmer, while stirring.

Once it obtains the desired consistency, taste and season, if needed.

Remove the bouquet garni, and allow the ketchup to cool. Grind again to a homogeneous mix and pour into clean, dry jars.

Place the jars in a large pot, bring to a boil and sterilize for 10 minutes.

Tip: You can add a few roasted peppers as well. They will contribute to the taste and give an extra sweetness to your homemade ketchup.
