How to make
The tomatoes are milled to separate the seeds and skins. The resulting pure tomato juice is boiled to thicken along with the ground onions and crushed chilies. Add the salt, vinegar, sugar and wine and boil for another ten minutes.
Shortly before removing from the fire, add spices and starch diluted in water and slowly pour into the boiling tomatoes. Dispense into appropriate containers and sterilize for 10 minutes.
