How to make
Slice the carrot and cucumber (unpeeled) with a sharp knife into juliennes similar to matchsticks. Chop the meat and mix it with a little diluted starch, salt and 1 tablespoon red wine.
Soak the crushed Chinese noodles and dried mushrooms in cold water. In a pot, heat oil on medium heat and fry the carrot. Put in the broth, add the meat and mushrooms and boil for 10 minutes.
Add all the other ingredients except the celery and boil for another 1-2 minutes. Be careful not to boil the vegetables too much - they must remain crunchy.
Add the celery and serve the soup hot.
