How to make
Peel an onion and a clove of garlic, peel a carrot, wash the lemon and then remove only the yellow part with a sharp knife with a potato peeler.
Wash the parsley, celery and rosemary.
Put all of the ingredients in a pot except for the pork legs.
Add enough cold water and then prepare the meat.
Put it on the heated hob, leave it to boil and continue to cook this broth for 15 minutes.
In the meantime, wash the pork legs well, check for hairs, in which case you will have to burn them.
Season the broth with salt and then add the pork legs.
Leave it to boil and cook for about an hour and a half for sure, until they become very tender.
Served these fragrant pork legs with extra virgin olive oil and a pinch of salt.
You can also serve them spread with arugula pesto. Enjoy!
