How to make
The washed and dried meat is rubbed with a mixture of salt and spices. It must be tied with a strong thread so that it does not lose its shape during baking.
Place the fillet in a small baking pan and bake for 60-75 minutes in a preheated oven at a temperature of 360°F (180°C). Transfer the roasted meat onto a warm plate and leave it to stand for ten minutes.
Meanwhile, dilute the sauce in the pan with the wine, transfer it into a saucepan and bring it to a boil over high heat. Pour the broth, let the mixture boil again and boil it for 2 minutes.
Once you have removed the threads, the meat is cut into thin slices, which are then arranged onto a serving plate, covered with meat sauce and decorated with fresh thyme stalks.
