How to make
Clean the meat from the excess skins and grease the surface of it. Rub it with black pepper and leave it at room temperature until it is time to cook it.
Cut the onions and garlic into large pieces and stew them in oil until they soften, for about 10 minutes on medium heat.
Pour the wine and cook without a lid for 1 minute, so that the alcohol can evaporate and then remove it from the heat and blend it.
Place the sauce back onto the heat and add the bay leaves, rosemary, thyme, black pepper, paprika, cayenne pepper, water and the crushed cube of broth. After the liquid boils, add the meat and stew for 1 hour. Check the tenderness of the pork and if necessary, continue cooking it until it softens enough. Add as much warm water as you want the thickness of your sauce to be.
Serve the finished dish warm in the company of potatoes or rice.
