Ingredients

  • turkey legs - 2.2 lb (1 kg)
  • rosemary - 2 stalks
  • garlic - 2 cloves
  • salt
  • paprika
  • olive oil - 1 1/3 tbsp (20 ml), or to taste
  • butter - 0.7 oz (20 g)
  • tangerine juice - 1/2 cup (100 ml)
  • lemon juice - 2 tbsp.
  • white wine - 1 cup (200 ml)

How to make

The turkey meat is often consumed in fitness diets for a reason: it is rich in proteins, magnesium and vitamin B.

The meat of the turkey legs is juicier, yet has a higher content of fat comparing to the turkey breast.

How to prepare the turkey legs:

Preheat the oven to 360°F (180°C).

Wash the rosemary and separate the leaves from the stalks. Slice the garlic finely, in order to fit it in the slashes you will make along the surface of the meat. Juice the tangerines and lemon.

Wash the turkey legs. Pat dry with kitchen roll. Make a few slashes along the surface of each leg and fill with rosemary, garlic and butter.

Arrange the turkey legs into a large baking tray. Season with salt and paprika. Pour in the tangerine and lemon juice and finally drizzle with olive oil.

Add the white wine. The liquids should cover 0.8″ (2 cm) of the meat and leave the skinned uncovered.

Cover with a lid, or tin foil and place on the middle scale of the oven. Cook for 90 minutes.

Remove the lid, or foil and cook for 30 additional minutes (to achieve a crispy crust, and reduce the sauce). Remove from the oven and arrange on a plater.

Pour the sauce into a measuring cup and chill for a few minutes.

While cooling the excess fat will float on the surface of the cup.

Remove the fat with the help of a spoon.

Taste the sauce and season with salt and pepper, if needed.
