"One turkey leg and the soup is ready in no time and there will be enough for everyone"

Ingredients

  • turkey leg - 1 pc. (chilled)
  • carrots - 2 pcs.
  • onion - 2 onions
  • potatoes - 1 pc.
  • vermicelli noodles - 2 tbsp.
  • pink tomatoes - 1 pc.
  • vegetable oil - 2 tbsp.
  • butter - 6 tsp.
  • sour cream - 3 tbsp.
  • yolks - 2 pcs.
  • black pepper grains - 20 pcs.
  • fresh thyme - 4 - 5 stalks
  • soup roots - 1 bunch (dried parsley and parsnips)
  • parsley - to sprinkle on the soup
  • salt
  • black pepper - by taste
  • lemons - the juice of 1 lemon

How to make

Put the turkey leg in a larger pot of cold water - about 2 liters. Add the necessary ingredients for the rich nutritious chicken broth to it - 1 onion (cut in hald), 1 carrot, soup roots, thyme and black peppercorns.

Bring the soup to a boil over high heat. Season it with salt and let the meat cook until it is fully cooked.

Remove the turkey leg and place it into a plate to cool.

Strain the chicken broth into a clay pot. The taste of the soup, that has simmered in it, is irresistible.

If you do not have one, cook it in a pot.

Add the whole potatoes and the onion and carrot are cut into small cubes.

Peel the skin of the sweet pink tomato. Grate 1/2 of it on a large grater and cut the other half into cubes.

After about 10-15 minutes the vegetables are cooked and it is time for the deboned turkey meat, the noodles and the tomatoes.

Mash the boiled potatoes and add it back into the turkey soup.

It is left to simmer on a very low heat. Sprinkle it with chopped parsley, freshly ground black pepper and season it with salt, if necessary.

Thicken it with the beaten yolks and cream.

Heat the butter in a heated pan, in which you need to place the sprigs of fresh thyme to enrich it with its aroma.

Serve the turkey leg soup warm and add a teaspoon of butter and squeezed lemon juice to it.
