Ingredients

  • strawberries - 6.5 lb (3 kg), or raspberries
  • water - 8 1/3 cups (2 liters)
  • citric acid - 1/5 cup (60 g)

How to make

Clean and wash 6.5 lb (3 kg) of well ripened strawberries. Pour 8 1/3 cups (2 liters) of water over them and add 1/5 cup (60 g) citric acid.

Allow to stand for 1 day, stirring them occasionally. Then, put them in cheesecloth and drain out the juice without squeezing the fruits.

Add 2 lb (1 kg) of sugar for every 4 1/5 cups (1 liter) of resulting juice. Stir the juice until the sugar is completely dissolved.

The next day, remove the foam carefully and pour the syrup into well dried bottles. Store them in a cold area.
