How to make
Heat the oil in a deep frying pan over medium heat. Fry the onions until they're golden brown for about 5 minutes.
Add the curry and stir well for about 1 minute. Add the broth and bring to a boil.
Add the lentils and rice, bring them to a boil, reduce the heat and cover them with a lid.
Cook for about 25 minutes or until the rice is fully cooked and the lentils have softened. If necessary, add a little water.
Season with as much black pepper and salt as you like. Sprinkle with finely chopped fresh parsley or coriander.
