Clean and cut all the vegetables into pieces, or rings in advance. Shred the cauliflower into florets. For 1 compote jar, the proportions are as follows: at the bottom of the jar, pour in 2/3 cup (150 ml) vinegar. Add 1 tablespoon sea salt, 3 tablespoons sugar, 2 crushed aspirins.
Fill the jars with the vegetables, put all the spices in, pour in cold water, and then close them. Flip the jars with the lids down. Flip the jars over periodically for 1 week.
