How to make
Wash the vegetables well. Remove the stems and seeds of the peppers and cut them into pieces. Cut the tomatoes and carrots into pieces as well.
Peel the onions and garlic, cut them into pieces.
Put everything together in a deep oven dish and bake in a preheated 390°F (200 °C) oven until the contents become reduced nearly by half.
Take it out of the oven and add the chopped parsley and garlic cloves, then mash in order to obtain a nice, smooth mixture.
Next, add the black pepper, oil, vinegar, salt and sugar and stir very well.
Fill jars with the ready chutney and close tightly with caps, then sterilize for 10 min.
Take the jars out and flip them with their caps down, leave them for 15 min.
Once you try this chutney you'll be left bewildered by its amazing taste and incomparable aroma.
