Zucchini and Tomato Salad
Ingredients: 2-3 zucchini, 3 tomatoes, 2 bunches green garlic, oil, salt, lemon, dill, 3.5 oz cheese.
Preparation: Wash the vegetables well and put the zucchini to boil. In the meantime cut the tomatoes into slices, chop the garlic finely. In a bowl mix the salt, oil, dill and juice of the lemon and stir (this is your dressing). Once the zucchini are boiled, drain them and leave them to cool, then cut them into slices of the same thickness as the tomatoes.
In a plate arrange the tomato slices, put the zucchini slices on top and finally, sprinkle with the green garlic. Then pour the dressing over the salad and sprinkle generously with cheese.
The next salad can be made with raw zucchini. This time, they are in combination with cucumbers. You will need small zucchini - about 10.5 oz (300 g) and the same amount of cucumbers. Peel both vegetables and grate them on a coarse grater. Put the vegetables in a plate and sprinkle with a combination of dill, parsley and green onions on top.
If you like you can also add several cloves of finely chopped garlic to taste. Put the herbs and spices according to your taste as well. Next comes the dressing - salt and add oil and lemon juice.

Zucchini Salad with Walnuts and Mustard
Ingredients: 1-2 zucchini, 4 garlic cloves, several bunches green onions, 1 tbsp mustard, 1/3 cup walnuts, dill, black pepper, salt.
Preparation: Once you wash the zucchini, cut them with a potato peeler - the strips need to be long. Salt them and after half an hour drain them well. While you're waiting you can finely chop the onions and garlic and add the mustard and other spices to them.
Once the zucchini have been well drained, put them in plates and pour on the sauce - finally sprinkle with small chopped pieces of walnuts and fresh dill. Optionally you can add vinegar or lemon juice, ham, prosciutto or your favorite sausage.
