Preparation: Preheat the oven to 340°F (170° C). Mix the eggs, sugar and butter. Beat with a fork until you get a sludge. Add the pieces of chocolate, essence and coarsely grated marzipan. Stir well. Add the flour and baking powder. Mix with a spoon until the mixture absorbs the flour.

Tear pieces from the dough and form balls. Arrange them in an oven dish and cover with baking paper. Bake the biscuits in the oven on the medium element for about 12 to 15 min.

Cookies with Marzipan

Ingredients: 4/5 cup soft butter, 1/3 cup powdered sugar, 1 egg, 7 oz almond marzipan, 1 1/5 cups flour, 3.5 oz natural chocolate, 2/5 cup liquid cream, 1 1/3 tbsp butter.

Preparation: Beat the butter and sugar with a mixer until you get a cream. Add the egg and finally grated marzipan. Stir until you get a smooth mixture. Add the flour with the baking powder and knead a smooth dough.

Cover the baking dish with baking paper. Make balls the size of a walnut from the dough. Arranged them in the baking dish about an inch from each other. Use a cork from a wine bottle to make indentations in the balls.

Heat the oven to 340°F (170° C). Put the baking dish in and bake about 12 to 15 min. or until the cookies turn pink.

Next comes the preparation of the filling. Heat the cream, chocolate and butter. The mixture needs to be hot enough for the chocolate and butter to melt but not hot enough to boil. Stir until you get a homogeneous mixture.

Pour the resulting filling into a pastry bag or rectangular plastic bag and cut off one of the edges. Fill the indentations of the cookies with the still warm filling. Store them in a tightly closing container.

Rolls Filled with Marzipan


For the dough: 1 cup flour, 1 tsp powdered cinnamon, a pinch of salt, 3 1/3 tbsp powdered sugar, 1 egg, 1 egg yolk, 2/3 cup cold butter.

For the filling: 14 oz almond marzipan, 2/5 cup finely ground raw pistachios, 3 1/3 tbsp powdered sugar, 2-3 tbsp liquid cream.

For the glaze: 2 tbsp rum, 2/5 cup powdered sugar, 2 tbsp chopped pistachios for serving.


Preparation: 1st prepare the dough. Mix the flour, cinnamon, powdered sugar and salt in a bowl. Make a well in the middle and pour in the egg and egg yolk. Cut the butter into small pieces and add it to the flour. Knead a smooth and sticky dough from the resulting mixture. Put it in a plastic bag and place it in the refrigerator for about an hour.

Next comes the preparation of the marzipan filling. Combine the crumbled pieces of marzipan, pistachios and powdered sugar in a bowl. Mix the ingredients with your hands. Divide the mixture into 4-6 equal-sized pieces. Form each of them into a roll.

Divide the dough into as many pieces as there are marzipan rolls. Roll out each one into a thin crust, to wrap around the marzipan rolls. Smear the butter crusts with a little cream. Place a marzipan roll on top of each and wrap it up. Fold the dough at both ends in order to completely cover the marzipan.

Heat the oven to 340°F (170° C). Bake the rolls about 15 to 20 min.

To make the glaze, combine the rum and powdered sugar in a bowl. Pour the resulting glaze over the warm rolls and sprinkle with chopped pistachios. Cool the rolls completely and cut them into pieces.
