Spelt is a very healthy wheat. Food served with it came more often for our ancient ancestors, who preferred it to wheat.
Differences between Spelt and modern wheat are several. Spelt has a simple genetic structure composed of 14 chromosomes. In contrast, modern wheat contains 42 chromosomes. Compared to modern varieties of wheat, coarse Spelt is twice as high in Vitamin A, has 4 times more beta-carotene, 4 times more lutein and 5 times riboflavin.

Spelt with yogurt and honey
Ingredients: 1 cup Spelt, ½ cup sour milk, 1 tablespoon homemade honey
Method of preparation: Wash the spelt well and drain it. Soak overnight in the yogurt and leave it in the fridge. When you remove to eat, add the honey.

Soup with Spelt
Ingredients: 2/3 coffee cup Spelt, 1 onion, 3 small colored peppers, bunch of parsley, 3 carrots, mint (6 pieces of fresh / 2 pinches dried), 2 tomatoes, 3 tablespoons of olive oil, salt.
Method of preparation: Cut onion large and the carrots into slices, peppers are cleaned and cut into large cubes, finely chop the stalks of the parsley, and put them in a suitable pan. Add salt and olive oil. Let them boil.
When this happens, add einkorn and chopped mint leaves (if using dried, ground them). Allow to simmer until einkorn is tender. Then add grated tomatoes and allowed to boil. Immediately after removing from the fire, the soup is dusted with finely chopped parsley leaves. Serve hot or cold - as you wish.
Healthy dish with Spelt
Ingredients: 2 cups pre-cooked Spelt, 1 medium onion, 1 tomato, 1/2 bunch parsley, 1 egg, 2 tbsp olive oil, 1/2 tbsp salt
Method of preparation: Olive oil is heated and stew the coarsely chopped onion and chopped stalks of parsley. When this happens, the dish gets the diced tomato and Spelt is cooked. Add salt and stir the stew. When done, remove from the fire and add well beaten egg. The mixture is stirred vigorously and divided into plates. Serve immediately and eat warm.
