What is Pumpkin Treacle and How is it Made?

Pumpkin treackle is simply pumpkin jam. It is of typical local origin from southern Bulgaria. It is also known as pekmez or majun. Nowadays this delicious sweet temptation is a little forgotten about.

To prepare pumpkin treackle at home, we need pumpkin, lime solution, sugar syrup, citric acid, geranium.

Choose a well-ripened pumpkin, peel it and cut it into small pieces.

The pieces of pumpkin are soaked in a lime solution, which is made, by mixing five liters of water and 150 grams of slaked lime. The solution is stirred and then left for a while to allow the slaked lime to settle.

The clear part of the solution is filtered and the pieces of pumpkin are soaked in it.

The lime solution should cover the pumpkin and it should be left like that for at least two hours. This way, the pumpkin hardens and will not become mushy.

Then a sugar syrup is prepared from one liter of water and two kilograms of sugar.

The pumpkin pieces are washed very well and then put to boil in the sugar syrup. The jam is boiled, until the syrup thickens.

Just before removing it from the heat, add a little citric acid and a few leaves of aromatic geranium.

Distribute it while still warm in dry and clean jars. The jars are closed tightly and turned upside down.
