Summer is the season of raspberries and there's no way to resist their temptation. These small red fruits are a real treat for the senses. And the desserts which can be made with them are supremely diverse. Here are some ideas for a few:
Raspberry soup
Ingredients: 2 cups raspberries, 2 cups water, 1 1/3 tbsp starch or semolina, 1 pinch of salt, sugar to taste, lemon zest.
Preparation: Stew the fruits in the water, along with the grated rind of half a lemon. Once they stew, mash them well. Using a wooden spoon, pass them through a colander. To the resulting mixture, add the semolina or starch that has been dissolved in cold water. Season with salt and sugar to taste. Serve the resulting "soup" either warm or cold.
Raspberry cream
Ingredients: 2 cups raspberries, 4 egg whites, 4/5 cup sugar.
Preparation: Beat the egg whites into thick snow. Mix them with half the sugar. Sprinkle the rest of the sugar over the raspberries. To them, add half of the egg white snow and stir well. Garnish the resulting cream with the other half. Leave it for a few hours in the fridge before serving.
Raspberries with cottage cheese
Ingredients: 9 oz cottage cheese, 1 cup raspberries, 2/5 cup sugar, 1 cup sour cream.
Preparation: Combine the cottage cheese and cream and beat them to snow. Add the raspberries to the result and stir well. Add sugar to taste. Serve in dessert cups.
Pink cocktail
Ingredients: 1 1/5 cups raspberries, 2/5 cup strawberries, 2/5 cup chocolate liqueur, 4 tablespoons of ice beaten to snow, champagne.
Preparation: Blend all the fruits. Distribute the result into 4 cocktail glasses. In each one, add 1 2/3 tbsp of chocolate liqueur and 1 tablespoon of ice beaten to snow. Top off the glasses with champagne and serve.
Raspberry pancakes
Ingredients: 3 eggs, 3 1/3 tbsp flour, 1 cup milk, 1 pinch of salt, 1 cup raspberries, a bit of butter, 2/5 cup powdered sugar.
Preparation: Prepare the pancakes in the usual fashion. While still warm, sprinkle them with raspberries, that have been sprinkled with sugar and mixed with cream or liquid chocolate. Fold the pancakes and sprinkle them with powdered sugar.
