Fritters are loved by young and old alike. Well-prepared fritters are a delicious dessert and wonderful breakfast. You can prepare soft, fluffy fritters in several ways.
The French recipe for tasty fritters includes cream. You will need 1 4/5 cups flour, 1 egg, 1/2 tsp baking powder, 1/2 cup each of salt and sugar, 1 cup cream and 1 cup oil.
Mix the cream with the egg and salt and whip until foamy. Combine the flour with the sugar and baking powder and sift them. Add them to the cream and knead a soft dough. Knead for no more than a minute and leave for 20 min. to sit.
Roll out the dough and use shapes to make small figurines or make circles with a small cup. Drop them in boiling oil, remove, drain on paper towels and serve with powdered sugar or jam.
Classic fritters are made from 2 lb flour, 1 tbsp yeast, 1/5 cup sugar, 2 tsp salt, 1/3 cup oil, 3 1/5 cups water. Heat the water to 90°F (30°C) and dissolve the yeast in it, while also adding the salt, sugar and flour.
Add the oil and knead the dough. Let it rise for an hour and a half at room temperature. Knead once again and let it rise for another half hour. Tear pieces from the dough and drop them in boiling oil. Remove, drain and serve hot.
You can also make fritters using nonstandard products, such as vodka and mayonnaise. You will need 2 eggs, 5 tbsp sugar, 1 vanilla, 1 pinch of salt, 1/2 tsp baking soda and 1/2 tsp vinegar for extinguishing, 4 tbsp mayonnaise, 1 tbsp vodka, flour - as needed for a soft dough.
Combine the eggs with the sugar, vanilla and salt. Add the mayonnaise and vodka, then the baking soda extinguished with the vinegar. Add the flour gradually.
Roll out the dough and cut out circles with a small cup. Drop them in boiling oil and then place them on paper towels to drain out the excess grease. Sprinkle with powdered sugar.
When making fitters, it is especially important to fry them in heated oil because otherwise they absorb too much of it, the dough becomes too heavy and it doesn't fry well.
