The name fathead comes from the name of the funny film “Fathead” by Tom Naughton, which in turn is a response to the documentary “Super Size Me” by Morgan Spurlock, in which Spurlock examines the problem of fast food and, after eating only McDonald's food for 1 month, gains 11 kg. McDonald's management describes the film as “unrealistic”, but still removes the option for Super Size foods from its menu.
Tom Naughton, however, is not at all convinced by Spurlock's lipid hypothesis (cholesterol hypothesis), which claims that there is a direct link between high cholesterol levels and the occurrence of cardiovascular disease. He does not believe that when a person consumes a high-fat diet, they will necessarily gain weight, experience a loss of energy, or that the risk of cardiovascular disease will increase.
So for 30 days he began to eat mostly at McDonald's, undergoing a diet high in fat but reducing sugar and starches. For example, he prepared onions fried in coconut oil for his cheeseburgers, which he ate without the bread itself, and for breakfast he preferred baked or fried grated cheese. In the end, his bad cholesterol index dropped from 156 to 130, and his good cholesterol rose from 49 to 64.
It would be incorrect to say that Tom Naughton himself is the creator of the original recipe for fathead dough, but he actually popularized the idea of making it. The real creator is rather the eldest son of Naughton's eldest brother, but this has not been proven either.

Let's get down to the nitty gritty and show you what the dough itself is and how to prepare it.
Fathead dough is made from almond flour and mozzarella cheese. This is how a dough is created that does not contain gluten, is rich in healthy animal fats and at the same time takes maintains your good figure.
You can use it to make pizza, crackers, pretzels, bagels and even sweets. It is extremely easy to prepare and can be stored in the refrigerator for a long time.
To prepare fathead dough, you need 1 large egg (or 2 small ones), 170 g of mature and grated mozzarella, 85 g almond flour, 50 g of full-fat cream cheese and a pinch of salt.
Melt the cream cheese and mozzarella in a water bath and beat the egg in a bowl and add the flour to it. Mix the egg mixture with the cheese mixture and knead the dough. It is best to leave it for about 20 minutes in the refrigerator and only then use it. That's all and there is no room for error.
