One of the first green plants to appear with the onset of spring is dock. Dock is related to sorrel, but it has a fresh and rich taste without the sourness. During heat treatment, dock does not change its taste. Its neutral taste makes it suitable for all types of salads and lean dishes.

It is no coincidence that nutritionists and scientists recommend that we include it in our diet, especially in the spring - after the long winter months. This green leafy vegetable is extremely rich in iron, making it an excellent choice for fighting spring fatigue and mild anemia.
Fresh green leaves, rich in chlorophyll, are an excellent tool for fighting free radicals. In addition, dock is a rich source of fiber, flavonoids, tannins, cellulose. This makes it a mandatory part of the menu for people who are fasting, vegetarians, those who eat raw food.
There are many vitamins and amino acids in dock. In addition, it contains anthraquinine glucosides, which are an excellent natural remedy for fighting lazy intestines and others.
Despite all the beneficial properties of dock, it should be noted that it is unsuitable for those who are genetically predisposed to the formation of kidney stones and gallstones.

It is obligatory to leave it soaked in cold water for at least 30 minutes before consuming or preserving it in order to get rid of the accumulated nitrates.

Another option for storing a dock is to cut it up and put it in plastic bags and store it in the freezer. Like other green leafy plants, you should not store dock in the freezer for more than a month, because its taste is lost that way.
For longer storage, dock can be placed in the freezer, but you need to blanch it beforehand. The fresh leaves are cleaned from the stalks and are shredded or cut into large pieces. Then blanch them in boiling salted water for a few seconds. Dock is placed in cold water to stop thermal processes.
When the dock is strained well and cools down, put it in plastic bags and put it in the freezer. In this form it is ready to be used for the preparation of delicious cream soup with dock and rice with dock.
For longer dock preservation, we can put the already blanched dock leaves in small jars. Fill them tightly, close them and boil them for ten minutes after boiling to seal the lids well. Preserved in this way, dock can last at least 1-2 years.
