Dock is an extremely healthy leafy vegetable that has a beneficial effect on the body in treatment of anemia, lazy bowel, psoriasis and diabetes.

Spring is the season of dock and if you want to eat it during the rest of the year, be sure to freeze a few bags of dock in the freezer.

Here's how to freeze dock, in order for it to still be tasty and healthy afterwards, as if you have picked it from the garden a while ago.

The dock is washed well and the veins on the leaves are removed;

The dock is shredded or cut in bulk;

You need to blanch the dock to preserve its color, taste and vitamins. If you freeze raw dock, you risk it losing its fresh appearance and useful properties after being taken out of the freezer;

Blanching is done by immersing the chopped dock in boiling water for a minute or two. Under no circumstances should you put on a lid, as it prevents the release of acids. Then take out the dock and immerse it in a bowl of cold water and ice.

Allow it to drain and cool, then store it in a glass box or jar.

If you do not have enough space in the freezer, you can use ziploc bags to prevent food from oxidizing from oxygen.

Frozen dock can be stored in the freezer for up to 8 months.
