Making homemade pastrami is a true art – from selecting the best pieces of pork leg, to carefully salting them, then seasoning them with spices and drying them. As a result of all these rituals, we hope to put on our table an exquisite delicacy that will complement the aged homemade wine.

However, sometimes it happens that we mess up somewhere, something in the recipe, as a result of which we add too much salt to the pastrami. And although many people would wave their hand and simply consume oversalted pastrami, there is no need to compromise on the taste.

There is an easy way to desalt oversalted pastrami. When figure out that you have overdone it with the salt, you simply need to soak the meat for a few hours in cold water or, even better, in white wine.

The meat is then carefully dried with kitchen paper, seasoned with a mix of spices for pastrami and hung in the open air to dry again.
