Preparing candied lemon peels or candied orange peels is not difficult at all, but it takes a relatively long time. Otherwise, for one dose of amazingly tasty and refreshing candied lemon peels you will need 6-7 lemons, 2 cups of crystal sugar and 3 cups of water.
Beforehand, you should wash the peel of the lemons very well with a brush, soap and warm water in order to remove as much as possible the traces of the chemicals with which they were sprayed.
Then, with a sharp knife or potato peeler, peel the skin carefully, so that the white part does not fall off. It must be removed, because it gives off a rather bitter taste of lemon peel.
The peeled skin is cut into thin strips or small squares and boiled with a little water. The first water (optionally the second water) is discarded, then the strips, along with the sugar are poured with 2 cups of water and boiled over low heat.
For two hours, the strips are boiled over low heat and are stirred occasionally. When they become transparent and the syrup thickens as much as possible, they are removed from the hob and arranged onto baking paper to drain.
If desired, you can roll the candied lemon strips in crystal sugar several times, until the sugar covers them on all sides. You can store the candied lemon strips in a jar with sugar or in a jar filled with boiling syrup. They retain their taste for a long time and are ready at any time to add an irresistible aroma to your cakes sponge cakes, as well as various beef dishes, duck dishes and more.
