The smaller the bulgur grain is, the less water it absorbs and ultimately the less water you will need. The ratio of water to bulgur is determined by the size of the bulgur.
What is the ratio of water to bulgur when it is boiled?
Fine and medium-sized bulgur: 1:1 ratio. You need about 1 cup of water for 1 cup of bulgur.
Coarse and very large bulgur: 1:2 ratio. These types of bulgur need to be boiled longer and therefore they require more water. For them you can use 1 cup of bulgur for 2 cups of water.
If the water is completely absorbed before the bulgur is cooked, just add a little more water and continue boiling, until the bulgur is fully cooked. And if there is somehow excess water, after the bulgur softens enough, you can strain it in a colander.
Mix 1 cup of coarse or very coarse bulgur with 2 cups of hot water in a pot with a lid. Add salt and olive oil and boil the mixture.
After boiling, reduce the hob to low heat and leave them to simmer under a lid for 15 minutes or until the water is absorbed. The time to prepare coarse bulgur is about 15 minutes. The time to prepare very coarse bulgur is about 20 minutes.
Once the bulgur is fully cooked, remove it from the heat and leave it to rest for another 15 minutes. Serve the boiled bulgur as a delicious side dish.
