How to make
Cut the beef into thin slices. Soak the meat in wine for several hours - best if for a day. Then strain and grill on a well greased griddle and finally season with salt and pepper.
Put the cleaned arugula leaves in a large bowl, distribute the cherry tomatoes, green onions and chives (finely chopped) on top.
On top, put the pieces of meat, and a few slices of lemon.
Beat together the balsamic vinegar, olive oil with spices and pour it on the salad just before serving.
