Grate the cleaned carrots into a suitable bowl. Add the walnuts, finely mashed or ground. Drain the corn from the juice in the can and add it to the salad.
Stir the products, salt to taste and stir again. Finally, add the pressed garlic cloves, sprinkle olive oil and freshly squeezed lemon juice.
Leave the salad to season for 15-20 min. in a cool area before serving.
