Ingredients

  • dough - 2 lb (1 kg) ready - made
  • feta cheese - 7 oz (200 g)
  • eggs - 2 + 1 yolk

How to make

Crumble the feta cheese and add 2 eggs to it. Stir well. Divide the dough into 17 parts and form them into balls. Take each ball and form it into a circle using a rolling pin.

Put feta cheese/egg mixture at one end of each circle, use the other half to cover it. Press with a fork along the edges. Make 16 of the balls in this manner.

Make 4 equidistant cuts on the last one, after you roll it out, and form it into a rose. Grab a tray and start arranging them in it, placing each one on its side. Put the rose one in the very middle.

Once you've arranged the pita, smear it with the yolk. Leave it to rise about 20 min. Bake in a preheated 320°F (160 °C) oven about 40-45 min.

After you take it out, sprinkle with a little water, cover with a towel and let sit for 10-20 min.
