How to make
Soak the quinoa for 20 min. in water, then boil it in the water for 15-20 min.
Strain into a bowl and leave the quinoa to cool in the fridge. Pour the vinegar, salt, black pepper, lemon juice and mustard in a blender and blend.
Mix the chopped cucumbers, pepper, onion, tomatoes and olives with the quinoa, season with the dressing and serve.
