How to make
Wash the quinoa in cold water, until the water becomes clear.
Put the quinoa in a medium-sized pot.
Add water and 1/2 teaspoon of salt. Leave the quinoa on low heat, until it boils.
Then lower the heat to the lowest setting, put the lid on and leave it to boil for 15 minutes, until the quinoa cracks.
Remove it from the heat and leave it aside with the lid on for another 5 minutes.
Finely chop the mint. Cut the cherry tomatoes in halves, the avocado into medium-sized cubes and the cucumbers into cubes.
Make the dressing: In a small bowl, beat the olive oil, lemon juice and salt.
In a large bowl, pour the quinoa, vegetables and dressing.
Mix everything well and serve with quinoa and avocado salad.
