How to make
Put the flour, 1 egg, several drops of vinegar and a little water to knead a dough.
Leave it to rest for 30 min., smeared well with oil, then tear it into small balls. Oil the table well and begin to roll out thin, transparent sheets using a rolling pin.
Mix 4 eggs with about 7 oz (200 g) feta cheese and put some of this mixture onto each rolled out sheet, while also adding several pieces of butter. Wrap it into a loose roll, then arrange in a spiral in a buttered oven dish. Keep at it until you fill it.
On top, I smeared it with what I had left over along the walls of the bowl with filling. Leave it for 30 min. to rest and then place it in the oven. Don't preheat it.
Once baked a bit, take it out, sprinkle generously with cold water and return to the oven for another 10 min. to become crunchy.
