"A lot of people simply don`t know what an onion pie is or confuse it with other dishes. So today we`ve prepared for you a genuine, traditional onion pie from Northwest Bulgaria, which is made with doughy sheets and juicy filling in between them."

Ingredients

  • for the dough
  • yeast - 1/2 cube
  • sugar - 1 tsp
  • oil - 3 tablespoons
  • salt - 1 tablespoon
  • water - 1 2/3 cups (400 ml) hot
  • flour - about 3 1/3 cups (800 g)
  • for the stuffing
  • onions - 2 lb (1 kg)
  • potatoes - 2
  • peppers - 2 red, dried
  • black pepper
  • paprika - 1 tsp
  • savory
  • salt - to taste

How to make

First, make the stuffing. Chop the onions finely and saute them in a few tbsp of oil. Once they change color and soften a bit, add the grated potatoes, crumbled dried peppers and the spices. Saute until ready. Leave it to cool.

Knead a dough from the ingredients listed for it. Leave it to rise until doubled in volume. Divide it into 2 parts, then 1 of those into 2 even smaller ones. Roll out the large ball into a sheet and place it in a buttered tray (your sheet needs to be larger than the tray you'll be baking in).

Distribute 1/2 the filling on top. Cover with a rolled out sheet from the small dough balls. Pour on the other 1/2 of filling. Cover with the final rolled out sheet. Fold the edges inward, press them firmly.

Leave it to rise for 30 min. Smear with the egg beaten with a little milk. Bake at 390°F (200 °C) for 35-40 min. Once baked, smear it with butter and cover with a towel.
