How to make
First, make the stuffing. Chop the onions finely and saute them in a few tbsp of oil. Once they change color and soften a bit, add the grated potatoes, crumbled dried peppers and the spices. Saute until ready. Leave it to cool.
Knead a dough from the ingredients listed for it. Leave it to rise until doubled in volume. Divide it into 2 parts, then 1 of those into 2 even smaller ones. Roll out the large ball into a sheet and place it in a buttered tray (your sheet needs to be larger than the tray you'll be baking in).
Distribute 1/2 the filling on top. Cover with a rolled out sheet from the small dough balls. Pour on the other 1/2 of filling. Cover with the final rolled out sheet. Fold the edges inward, press them firmly.
Leave it to rise for 30 min. Smear with the egg beaten with a little milk. Bake at 390°F (200 °C) for 35-40 min. Once baked, smear it with butter and cover with a towel.
