Ingredients

  • mince - 9 oz (250 g)
  • eggs - 1 + 3, boiled
  • parsley
  • salt
  • breadcrumbs - 2 tbsp
  • black pepper
  • peppers - 10.5 oz (300 g), green
  • tomatoes - 3.5 lb (1.5 kg)
  • garlic

How to make

Roast the peppers, peel them and remove the seeds. Peel the tomatoes, grate half of them, chop the rest finely.

Put them in heated oil and add the chopped peppers. Leave them to simmer on low heat about 10 min.

Add the chopped garlic, parsley and remove from the stove.

Knead the mince with the egg, black pepper, breadcrumbs and a pinch of salt. Form 3 large meatballs and place them in a small, oiled oven dish.

In the middle of each meatball, make a hole and put 1 peeled, boiled egg.

Pour the tomato mixture into the oven dish and put it in a preheated 390°F (200 °C) oven. Bake for 20 min. and sprinkle with parsley.
