How to make
Cut the meat into pieces and sprinkle it with the flour. Shake off the excess, heat the olive oil in a pan and braise the meat until golden.
Take it out of the pan and add the finely chopped onions and carrots. Stir and fry until softened.
Chop the peppers finely and add them, add the tomatoes, bay leaf, sugar and spices.
Return the meat to the pan and close with a lid. Cook the meat until the liquid from the tomatoes evaporates, while stirring periodically.
Finally, serve sprinkled with parsley.
