"These pizza muffins go great with any kind of topping and are incredibly delicious and easy to make. A wonderful recipe for any occasion"

Ingredients

  • yoghurt - 1 cup
  • eggs - 2
  • oil - 1/2 cup
  • salt - 1 tsp
  • basil - 1 tsp
  • oregano - 1 tsp
  • thyme - 1 tsp
  • flour - 2 1/2 cups
  • baking powder - 1 packet
  • feta cheese - 1 cup, soft, can use mozzarella too
  • pickles - 3
  • sausages - 5.5 oz (150 g), by choice
  • cherry tomatoes - 12
  • olive
  • ketchup
  • cheese - 3.5 oz (100 g)

How to make

Mix the eggs and yoghurt together. Add the flour, baking powder, salt, oil and stir once again (to get a thick mixture).

Chop the pickles, sausages and crumble the feta cheese. Add them to the mixture along with the thyme, basil and oregano, stir (you can also add pitted or whole olives to the mixture - you decide).

Heat the oven to 360°F (180 °C). Cover the muffin tray with muffin cups.

Distribute the mixture into the cups and put a cherry tomato in each one, press down on it so it sinks.

Smear ketchup on top, grate cheese and stick an olive in each muffin.

Bake for 35-40 min.
