Ingredients

  • corn - kernels of 2
  • oregano - 1 tbsp
  • beans - 1 4/5 cups (425 g), canned
  • tomato paste - 1 tbsp
  • tomatoes - 16 oz (450 g)
  • cumin - 2 tsp
  • chili peppers - 2
  • peppers - 1
  • garlic - 2 cloves
  • onions - 1 head
  • oil - 2 tbsp

  • corn flour - 2/5 cup (115 g)
  • cheddar - 1.5 oz (40 g)
  • butter - 1 tbsp
  • milk - 2/5 cup (100 ml)

  • baking powder - 2 tsp

How to make

Heat the oven to 430°F (220 °C). Boil the corn for 8 min. Drain it and peel the husks.

Heat the oil and braise the onions, garlic and peppers for 5 min. Add the chili peppers and cumin and fry 1 more min.

Add the tomatoes, tomato paste, beans, corn and oregano. Bring to a boil, then boil 10 min. In the meantime make the topping.

Combine both types of flour, the egg, milk and butter, stir well. Transfer the vegetable mixture to an oven dish, sprinkle with the corn mixture and bake 30 min.

Take it out of the oven, sprinkle with the cheddar and then bake another 5-10 min.
