How to make
Cut the onion into small pieces and the bacon into cubes. Fry them in a little oil and leave them to cool. Put the boiled and strained beans in a bowl.
Mash them, but not too much and add the onion with the bacon and finely chopped parsley. Add the egg and flour.
Mix everything well and leave the mixture in the refrigerator for 1 hour. From the resulting mixture form small balls.
In a bowl, mix the flour and breadcrumbs. Roll the meatballs and fry them in hot oil until they aquire a golden color.
Take them out and place them onto kitchen paper, so that it can absorb the fat. Arrange them on a plate and garnishing them with cucumbers and cherry tomatoes.
