How to make
Clean the carrots and grate them on a coarse grater, chop the onion and parsley very finely. Put the cleaned and grated carrots, onion and parsley in a deep bowl, crack 1 egg inside and add a pinch of salt and a pinch of black pepper, then add the flour.
Stir to mix all the ingredients well. Add oil in a pan, enough to cover the bottom nicely, heat it and then with wet hands, take a little of the mixture, shape it into a ball and put it to fry.
Once they're done, flip them over. Take them out onto paper towels to absorb the excess fat.
