  • quinoa - 3/4 cup
  • onions - 1 head
  • oil - 1 tsp
  • garlic - 3 cloves
  • vegetable broth - 1 1/2 cups
  • cumin - 1 tsp, seeds
  • cayenne pepper - 1/4 tsp
  • black pepper
  • corn - 1 cup, frozen
  • black beans - 2 cans
  • coriander - 1/2 cup, chopped

How to make

Heat the oil in a pan, fry the onions and garlic. Add the quinoa and vegetable broth. Season with the cumin, cayenne pepper, salt and black pepper.

Bring the mixture to a boil, put the lid on, reduce the heat and saute for 20 min.

Heat the frozen corn in a pan, mix it with the drained black beans and coriander. Mix with the quinoa, stir well and serve.
